Lamb Shanks with Red Wine Sauce


  1. Ingredients

    6 lamb shanks
    Flour to coat shanks
    ¼ cup oil
    1 onion, diced
    1 carrot, diced
    ½ stick celery, diced
    1 x 410 g tin crushed or chopped tomatoes
    1 tablespoon chicken stock
    1 tablespoon tomato sauce
    1 tablespoon mixed herbs
    1 tablespoon crushed garlic
    1 tablespoon white sugar
    ¼ cup red wine or to taste
    1 cup water
    Gravy mix


    Coat lamb shanks in flour. Drizzle with oil and bake in a roasting tin at 180 C for 1 hour.
    Remove shanks from tray and scatter diced vegetables in the bottom.
    Return shanks to tray. Combine remaining ingredients, apart from gravy mix and poured over shanks.
    Cover with foil and bake in low oven for approximately 3½ hours or until shanks are tender. Turn once or twice during cooking.
    Remove shanks from tray and strain stock into saucepan to make sauce using the gravy mix of your choice.
    Serve with mashed potatoes.
