An older Manchego gets heartier and more flavorful as it ages. From Merco, Spain, this sheep’s milk cheese has a more developed flavor and firmer texture than younger Manchego cheeses. This pale golden-yellow cheese has a full bodied yet pleasant and light aroma that falls between Kasseri and Kefalotiri in hardness, but with a more sharp and salty taste. Kefalograviera makes a tasty impression when grated into pasta, souces, pies, as well as meat and poultry dishes. It is great when paired with bread and home-made jam, and is exceptionally delicious when fried to make Saganaki cheese.
Gouda, or “How-da” as the locals say, is a Dutch cheese named after the city of Gouda in the Netherlands. If truth be told, it is one of the most popular cheeses in the world, accounting for 50 to 60 percent of the world’s cheese consumption. Smoked Gouda is a variant of this famous cheese wherein it is smoked in ancient brick ovens over flaming hickory chip embers. Sensational with beer, this hard cheese has an edible, brown rind and a creamy, yellow interior. It can also perfectly complement tasty snacks like fruits, nuts and dark chocolate. It forms a good combination of sandwiches and burgers.

Valbreso feta is a cheese that defies convention. Most people know this crumbly, white, sheep’s milk feta, as a traditionally Greek cheese. However, it can be found all across the mediterranean region – much like olives and olive oils – with different nuances. This particular cheese comes from the South of France, and is made from the milk left over from Roquefort production, that smooth and delicious blue cheese. Valbreso is moist and creamy, with a rich flavor that is well-balanced in salt (unlike most commercial varieties, that are dry and salty), and is milder than most Greek fetas. This is definitely one of those cheese that will make you rethink good old feta! This cheese is great on its own, as a snacking cheese, but can also be used in salads, especially with tomatoes and olive oil. Bring to room temperature before serving. Pair with your favorite white wine blend.
The most prized and celebrated of all French cheeses, Brie is believed to have been created prior to the Eighth Century. Charlemagne’s chronicler, Eginhard de Saint Gall, reported that the Emperor enjoyed it at the Priory of Rueil in the town of Brie in the year 774. In 1815, the Prince of Tallyrand named Brie “Le Roi de Fromages” – The King of Cheeses.
A soft, white cow’s milk cheese with a creamy texture and tangy aftertaste. Sharing similarities to Feta, Telemea is used in salads and in pairings with snacks.
