Ingredients

  • 1 lb. ground meat
  • 6 tbsp. rice
  • 1 tsp paprika
  • 1 tsp dried savory
  • Salt & pepper to taste
  • 2 tbsp flour
  • 6 cups water
  • 2 beef bouillon cubes
  • 1/2 bunch scallions, chopped
  • 1 green bell pepper, chopped
  • 2 medium carrots, peeled & thinly sliced
  • 3 tomatoes, peeled & chopped
  • 1/2 bunch parsley, minced
  • 1 egg
  • Lemon juice

Instructions

Step 1: Prepare the Meatballs

  1. In a bowl, combine ground meat, rice, paprika, and dried savory. Season with salt and pepper.
  2. Mix well and form into 1-inch balls. Roll each meatball in flour to coat.

Step 2: Prepare the Soup Base

  1. In a large pot, combine water, bouillon cubes, salt, pepper, scallions, bell pepper, carrots, and tomatoes.
  2. Cover and bring to a boil. Then reduce heat and simmer for 30 minutes.

Step 3: Cook the Meatballs

  1. Add the meatballs to the pot. Cover and bring to a boil again.
  2. Reduce heat and simmer for another 30 minutes or until the rice is cooked.

Step 4: Final Touches

  1. Add minced parsley during the last 5 minutes of cooking. Taste and adjust the seasoning as needed.
  2. Just before serving, beat an egg with some lemon juice and stir it into the soup.
