Ingredients

  • 1 cup Panko bread crumbs
  • 1/2 cup AP Flour
  • 1 egg, beaten with 1 tbsp water
  • 1 cup baby bellas, sliced
  • 1/2 cup Cab or good red wine
  • 1/2 cup beef stock
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • Butter
  • Salt & Pepper to taste

Instructions

Step 1: Prepare the Shnicel Coating

  1. In one bowl, place the Panko breadcrumbs. In another bowl, place the AP Flour. In a third bowl, beat the egg with water.

Step 2: Cook the Mushrooms

  1. In a skillet, heat olive oil and add sliced baby bella mushrooms. Sauté until browned.

Step 3: Make the Sauce

  1. Add red wine to the skillet and let it reduce by half.
  2. Add beef stock and heavy cream. Simmer until the sauce thickens.

Step 4: Cook the Shnicel

  1. Dip each Shnicel piece into the flour, then the egg mixture, and finally coat with Panko breadcrumbs.
  2. In a separate skillet, heat some butter and fry the coated Shnicel until golden brown.

Step 5: Serve

  1. Place the cooked Shnicel on a plate and pour the mushroom and cream sauce over it.
